Hawaiian Spam Pizza

  • 2 tablespoons butter or vegetable oil
  • 1 large red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup pineapple tidbits, fresh or canned
  • 1 tube refrigerated pizza dough
  • 2/3 cup sweet and spicy barbecue sauce
  • 8-ounces Spam, cut into long, thin strips
  • 1/2 cup chopped scallions
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded pepper jack cheese
Directions
  1. Preheat oven to 400 F.
  2. Melt butter in a large skillet over medium-high heat.  Add onions and peppers and sauté until onions are translucent.  Reduce heat to medium-low and continue to sauté until onions are soft and caramelized, about 10 minutes.  Remove to a plate and place skillet back over heat.
  3. Raise heat up to medium and add pineapple to the pan.  You can add a little more butter if needed.  Sauté pineapple until soft and slightly caramelized, about 3-4 minutes.  Remove from heat.
  4. Roll out pizza dough and press into a 10 x 15 baking pan.   Bake for 5 minutes and remove from oven.
  5. Ladle barbecue sauce on top of the dough, and spread it around to cover the surface, leaving a 1-inch border.  Place onions, peppers, pineapple, Spam and scallions on top.  Cover with shredded cheese.
  6. Bake until crust is golden brown and cheese is melted and bubbly, about 15 minutes.  Slice and serve immediately.
