- 2 tablespoons butter or vegetable oil
- 1 large red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup pineapple tidbits, fresh or canned
- 1 tube refrigerated pizza dough
- 2/3 cup sweet and spicy barbecue sauce
- 8-ounces Spam, cut into long, thin strips
- 1/2 cup chopped scallions
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
Directions
- Preheat oven to 400 F.
- Melt butter in a large skillet over medium-high heat. Add onions and peppers and sauté until onions are translucent. Reduce heat to medium-low and continue to sauté until onions are soft and caramelized, about 10 minutes. Remove to a plate and place skillet back over heat.
- Raise heat up to medium and add pineapple to the pan. You can add a little more butter if needed. Sauté pineapple until soft and slightly caramelized, about 3-4 minutes. Remove from heat.
- Roll out pizza dough and press into a 10 x 15 baking pan. Bake for 5 minutes and remove from oven.
- Ladle barbecue sauce on top of the dough, and spread it around to cover the surface, leaving a 1-inch border. Place onions, peppers, pineapple, Spam and scallions on top. Cover with shredded cheese.
- Bake until crust is golden brown and cheese is melted and bubbly, about 15 minutes. Slice and serve immediately.
